If you are just starting out and have already decided you want to pursue Herbalism, I suggest you choose Undead as your race if you are with Horde and Human race if you are with the Alliance. Tauren are another good option as they start with a 15 point bonus in this profession.
Like Mining, the Herbalism profession offers opportunities to make big sums of gold in short amounts of time when used correctly. If money and gold are your driving factors, the best thing for you to do will be to combine the Herbalism profession with Mining. If you want to use Herbalism to create something of value, the best combination would be with Alchemy.
Before you start your profession you'll need to be level 5. Initailly you won't be able to search for any herb other than Silverleaf. You can find Silverleaf by hitting the "find herb" command which become active on completion of the Herbalism training. Silverleaf has more monetary value than copper so use this as a money making tactic when you first start out.
If you travel just a short distance from the starting area you'll be able to find the Silverleaf herb. If you spend 8 or so minutes gathering this herb you will have a complete stack which can be sold for at least 1 piece of gold in the auction house. It may not sound like much but for a brand new character that's pretty good going.
An important thing to remember is that the value of these types of herbs changes as the in-game economy changes. If you can't get much for your herbs one day, come back the next and try again. When you start out with the Herbalism profession you will spend a long time searching for these low value herbs, after a littler perseverance however, you'll soon be able to search for rarer herbs such as the Black Lotus and Ghost Mushrooms (search for these in the Hinterlands). These will allow you to make much more money much more quickly.
Herbalism is one of the most lucrative professions in WoW. It's a good option for those who want to make a lot of gold in minimal time and also for people who are just looking to make enough to get by. Keep working on your Herbalism skills and this profession will reward you big time.
